The picture I have here is from a day prior when I was experimenting (my camera was dead yesterday), but I thought I’d share with you the idea that I was working with: coconut- cocoa oats. I have tried to make chocolate oats before with cocoa powder and they tasted pretty much like mud, so I made some alterations. First of all, the addition of SF (sugar-free) instant vanilla pudding helped balance the bitterness from unsweetened cocoa. The coconut (sweetened, that’s all I had) shreds and Light Chocolate Silk (soymilk) also lightened the flavor. Here’s what I tried out:
~1/3 c oat bran
a little less than 1/3 c choc’ soy milk, 1/3 c water
~1 tsp. SF instant vanilla pudding
maybe a Tbl coconut flakes
pinch salt and cinnamon
1/3 banana slices added half way through cooking time
Afterwards I added vanilla extract, a little extra unsw’ cocoa, drizzle extra milk, and some chocolate greek yogurt topping. I think that’s everything…I usually add a touch of sweetener if I want it too.
This recipe is still in the works, but it’s a start (the real batch, not test batch, was much darker- this one had blueberries in it, I think?)
